Sweet & Salty Snacks

These easy-to-make, no-cook snacks satisfy any craving! Plus they’re handy to keep in the fridge for grab-n-go convenience!

Sweet 'N Salty Fudgy PB Energy Bites

Equipment Needed

Mixing bowl like this high quality set
Stiff mixing spoon like my favorite one!
Square or rectangle glass dish (8” or 9” size like this one with a storage lid)
Parchment paper helps keep things from sticking (I like using brown parchment paper!)
Long, sharp chef’s knife like one of my favorites!
Cutting board like this one from the only brand of boards I use!
Store in glass containers like these favorites!
Refrigerator for chilling

Ingredients

1/4 c hemp seeds (also known as hemp hearts) like this

1/4 c raw cacao nibs like from this quality brand

2 T chia seeds like from this quality brand

2 c almond flour like from this quality brand

1 c peanut butter without added oil or sugar like this popular brand

6 T pure maple syrup like this kind

1 t pure vanilla extract like this rich Mexican vanilla that I use!

3/4 c plant milk (flax, almond, oat, or cashew) - this one is my favorite!

Flake salt as desired

Instructions

In a medium or large mixing bowl, mix all the dry ingredients together (except flake salt).

Add the wet ingredients and mix well to combine using a stiff mixing spoon.

Spread the dough into a 9"x9" glass dish (or any medium sized square or rectangle glass dish) lined with parchment paper.

Sprinkle flake salt on top and lightly tap it into the dough with your clean fingers or the mixing spoon. Chill in the refrigerator for at least 2 hours.

Lift out the parchment paper and put the large dough block onto a cutting board. Using a large chef's knife, cut it into bites or bars.

Serve chilled. Store in a tightly-lidded container for up to 2 weeks (if they last that long!).
